Healthy Recipe: Peanut Butter Oat Bran Cookies

Action 2 News This Morning anchor Kevin Rompa is sharing recipes for healthy foods he enjoys.  He says he always has his special homemade peanut butter cookies on hand, loaded with grains and proteins.

Here's the recipe:

INGREDIENTS

1 stick of melted butter (or less)
1/4 cup brown sugar, stevia or honey
1/4 cup applesauce
1/2 cup natural peanut butter (should contain only peanuts, and maybe salt)
1/2 tsp. vanilla
1 cup steel cut oats
1/2 cup ground flax seed
1/2 cup oatmeal
3/4 tsp. baking powder
1/4 tsp. baking soda

DIRECTIONS

Preheat oven to 350 degrees.  Mix melted butter with sugars. Add applesauce and mix well.

Stir in peanut butter and vanilla until smooth.  Add remaining dry ingredients (if it's too dry to mix, add more applesauce or melted butter.)

Drop teaspoon onto ungreased cookie sheet.  Bake 10 minutes until golden brown.
